Spanish Iberico pork comes from the Black Iberian Pig, which is native to the Iberian Peninsula. These pigs roam free in oak forests and consume a diet predominantly of acorns. This unique diet leads to richly marbled meat, giving Iberico pork its exceptional flavor and tenderness, often likened to Wagyu beef in its quality.
Iberico pork is prized for its taste but also for its health benefits. It is rich in monounsaturated fats, which are known for their positive impact on cholesterol levels.
In order to reduce the amount of plastic waste and to make it easy to freeze, our handmade burgers are now layer packed and prepared by the box instead of individually vacuum packed. Simply take out what you’re planning to grill that day and toss the rest in the freezer. Once frozen, the convenient dividers make it easy to remove a layer to thaw for your next gathering.

Preparing our Wagyu beef and Iberico pork burgers is simple. For the ultimate grilling experience, we recommend the following steps to ensure each bite is as delicious as the last:
Preheat Your Grill or Skillet: Start by heating your grill or skillet to medium-high heat. This ensures a nice sear that locks in all the delicious juices.
Season Generously: Before grilling, season your burgers to enhance their natural flavours. We suggest using one of our specially curated sea salts from Newfoundland, available in several enticing varieties:
Plain Newfoundland Sea Salt: Sprinkle a bit of this pure sea salt for a clean, crisp accent that enhances the natural flavours of the Wagyu and Iberico pork without overpowering them.

Venison striploin is a premium cut that deserves a cooking method that enhances its natural flavours and tender texture. Whether you're looking for a classic approach or something a bit more adventurous, there are several recipes to follow when cooking this exquisite meat to perfection.
Pan-Seared with Garlic and Thyme: Begin by heating a cast iron skillet over high heat. Season the venison liberally with Newfoundland Sea Salt and some black pepper. Add a small amount of oil to the pan, then sear the venison on each side for about 2-3 minutes. Lower the heat, add crushed garlic cloves and fresh thyme, and baste the striploin with the flavoured oil to finish cooking to your desired doneness. (We recommend medium rare at 135°F.)
Grilled Over Charcoal: Preheat your grill to a high temperature. Brush the striploin with oil and season with a smoky spice blend. Grill each side for 4-5 minutes or until you reach the preferred level of doneness. Let the meat rest for a few minutes before slicing to keep the juices locked in.
Roasted with Root Vegetables: Preheat your oven to 375°F (190°C). Season the venison with salt, pepper, and your choice of herbs. Arrange in a roasting pan surrounded by chunks of carrots, potatoes, and onions. Roast in the oven for about 25-30 minutes, depending on the thickness of the striploin, until the vegetables are tender and the meat is cooked to your liking.

We cut each order of our venison striploin fresh and vacuum-seal them immediately to lock in freshness and flavour. We then transport your order in our insulated bag, or you can opt for pickup.
Upon receiving your venison, promptly refrigerate it. The vacuum-sealed striploin maintains its quality in the refrigerator for up to three weeks or can be stored in the freezer for up to six months.

How We Ship Our Chicken Liver
Each order of our chicken liver is carefully portioned into 1 – 1.5 lb packs. Right after packaging, we vacuum-seal the livers to lock in freshness and quality. They are then shipped directly to your doorstep from our Toronto, Ontario, butcher shop in insulated boxes and insulated bags to maintain optimal temperatures.
Upon arrival, we recommend that you place your chicken liver in the refrigerator immediately. Our vacuum-sealed chicken liver will stay fresh in the refrigerator for up to three weeks, and it can be frozen for longer storage up to six months. We ship throughout the Greater Toronto area, or you can visit our store for pickup!
